Pure Gir cow ghee is ghee made only from the milk of Gir cows, with nothing else added. No single home test can prove that. What you can do is read the label, ask for a batch lab report and understand how the ghee is made. This guide shows you how, in the order you would use it.
What pure ghee means 🌿
In FSSAI's standard, ghee is the pure clarified fat derived solely from milk, curd or desi butter. It must be free from vegetable oil or fat, animal body fat and mineral oil, with no added colour or preservative. Moisture is capped at 0.5%, and free fatty acids at 3% as oleic acid. Labs also check values such as the Butyro-Refractometer reading and the Reichert-Meissl value, which vary by region.
So pure ghee is a legal and a chemical definition. You cannot see it, and you cannot fully smell it.
What home tests can and cannot tell you 🌿
You will find many home tests online: rubbing ghee on your palm, floating it in water, melting it and smelling it. FSSAI has also published rapid tests for households, called DART. They are useful as a first screen, and they can catch clumsy adulteration.
They are not proof. In a 2016 study of ghee-based sweets, market samples showed 13.78% to 66.27% foreign fat, and gas chromatography picked up foreign fat at about 5% that conventional tests missed. Home tests are a screen. A lab report is proof.
Six checks before you buy 🌿
- The ingredient list is one line. It should read cow milk ghee, and nothing else.
- There is an FSSAI licence number printed on the pack.
- There is a batch number, packing date and shelf life. Ours is 12 months from packing.
- The maker can share a recent lab report for the batch, from an accredited lab.
- The maker names the farm, the herd and the process. If they cannot say where the milk comes from, ask why.
- The price makes sense for the method. Bilona ghee uses a lot of milk and a lot of time for a little ghee. If a price looks too low for that, ask how.
The bilona method, in five steps 🌿
- Fresh milk from the herd.
- Curd: the milk is set naturally into curd, not separated as cream.
- Churning: the curd is hand-churned at the correct hour to separate the butter.
- Butter: fresh, cultured makhan is collected.
- Ghee: the butter is slow-heated over firewood until it becomes ghee.

What "A2" and "Gir" do and do not tell you 🌿
A2 refers to a variant of a milk protein, beta-casein. Indigenous Indian breeds such as Gir are prized for A2 milk. But ghee is almost entirely milk fat, with extremely low levels of casein and lactose, so the protein argument matters more for milk than for ghee.
The evidence is also measured. In 2009, the European Food Safety Authority found no established cause-and-effect link between dietary intake of BCM-7, a peptide released from A1 beta-casein, and non-communicable diseases. A 2022 review found moderate-certainty evidence of less digestive discomfort with A2 milk than A1 milk, and limited evidence beyond that.
So we would not choose Gir ghee for a health promise. We would choose it for what it tells you about the source: a known breed, a known herd and a process you can trace.

How can I check if ghee is pure at home?
Home tests such as the palm rub, water float and melt test can flag obviously poor ghee, but none proves purity. FSSAI's DART tests help as a screen. For certainty, check the FSSAI licence, batch details and a lab report from an accredited lab.
Is A2 Gir cow ghee better than regular ghee?
A2 refers to a milk protein, and ghee contains almost none. The evidence for A2 benefits is stronger for milk than for ghee. Gir ghee is better judged on source and process: a known herd, breed-specific milk and a traceable bilona method.
What is bilona ghee?
Bilona ghee is made the traditional way. Milk is set into curd, the curd is hand-churned to separate butter, and the butter is slow-heated into ghee. It takes more milk and time than cream-based methods, which is why it costs more.
How long does pure ghee last?
Ours lasts 12 months from packing in a sealed glass jar. Shelf life differs by maker, so check the packing date on every pack. Store ghee away from heat and moisture, and use a dry spoon each time.
